Pro Tip: Healthy Caramel Apple!

I had been holding on to a jar of sunflower seed butter for a long time without ever getting use of it.  Until I spread it on a green apple and realized it tasted like caramel! 😀

Summer Munchies Got Me Like!

There is a Cold Stone within walking distance of my boyfriend’s apartment.  Last Sunday, after a lovely and leisurely Labor Day weekend family dinner, I wanted chocolate ice cream to top it all off.  This isn’t my first ice cream post! ;D I had an inkling for some marshmallow in it, and Cold Stone didn’t disappoint.  I could sprinkle on some mini-white chocolate chips and a little caramel, too!  First topping free, additional’s .89.  Of course, I got a small!  I was kinda surprised when it rung up to $7.89.  Oops!  Definitely not a thrifty ice cream! ;o) ..More than a venti mocha!

Next night, Trader Joe’s, I picked out their chocolate ice cream.   Summertime munchies got me like salty crunchy caramel marshmallow chocolate ice cream toppings! 😀 Like magic, TJ’s chocolate covered marshmallows, pretzel slims, and a chocolate caramel bar fell into my hands!  Never mind what the expense was; this was stash for days!  I have been using my Magic Bullet for all my protein shakes for months and thought of blading together the pretzel slims, chocolate marshmallow and caramel.  It worked so well!  Made a perfect topping for ice cream, enjoyed better than Cold Stone’s, but thanks to them for getting me started in the right direction! 😀

Botching a Batch of Ghee

Oh man, I just exemplified “Haste Makes Waste” like a boss.

I tried to rush making a batch of ghee before work.  I had my doubts.  As I started, I knew that even if I had the window of 30 minutes to do it, I had other things to do to get ready for work during that time; I wouldn’t be able to keep an eye on the ghee the whole time which is how I like to get it done.  From the Irish butter I use to the classical radio I listen while it bubbles into liquid gold, making ghee is one of my most sacred symbols and source of yummy sustenance  in the house.

And this morning I botched a batch like a boss.

It was going well, I was listening to the sound of it sizzling from the other room, a stronger than usual sizzle; if i were in the room I wouldn’t let it be sizzling so, but I was aware that listening to it that more intently was not a bad thing.

But then I went back and forth in the rooms a little, and when I got back, there were dark specks bubbling up and I thought I had begun to overcook the bottom.  This is where I hastened.  Instead of just taking the pot off the burner and letting it begin to cool, I rushed to pour it into the glass jar awaiting on the counter.  So it cracked.  and leaked the ghee all onto the counter, and broke the glass, my favorite jar for it.  Now I know how perfectly a glass jar cracks when the fluid is too hot.  I couldn’t have used the ghee for anything else, since there might be glass in it, and the cloth I used to try and wipe down the counter might have to be trashed, and I’m probably backing up the sink for letting some of it drip in the drain.

Really, a waste. Many wastes. (I hadn’t had any coffee in the morning yet either.)  The “Peer Gynt” theme that underscored the sizzle suddenly felt less special, too.

Except  for the opportunity for voice that bubbled up awakened that said “I forgive you.” Like a little fairy, a tiny little me, still in my comfy clothes, flew from under the covers to my shoulder to offer forgiveness.

Yes, I am going to forgive myself for that blunder.  If only for the opportunity for practice forgiveness to myself.

Time to go to the store, pick up some more butter, and take my time to try again.

This is real food, seriously!

After so many years minding my food and my workouts, and still finding myself not as thin as I liked, and with discouraging and confounding fluctuations, I was finally seeking help to answer the question “What is the least I need to eat to meet my nutritional needs for my height, weight and age and be done with this, already!”  I’ll do it!  I love vegetables!  I’m well trained to eat them!  Of course I love mocha coffees and french fries, too, so just let me know how to squeeze it all in and boom!  Let me be ATAP. As thin as possible! I don’t want to exercise to stay thin, I want to eat as little as I need to melt away to my natural weight eating the least food I need.  Let me differentiate nutrition and exercise into their respective parts.  What do I need to eat for my nutritional needs ~ What is the least I need to eat!?  That question drove me to a nutritionist ~  I had worked with one once before, when I was pregnant, so that I ate super well for me and baby ~ And I have had my eye on the calories and scale since after my high school freshman year, I gained those 15 pounds (oh, delicious high school cafeteria chocolate chip cookie, who knew!?  Not like I was eating a box of cookies, just one thin delicious brick-shape a day! every day!  Oh, dear Weight Watchers, with thanks for making tomatoes and zucchini a meal) ~

Carbohydrate High and Low ~

Today marks a very delicious, precious, rare, fine, low-day in carbohydrate high life ~
The holidays warmed me up! Veteran that I am, it is like riding a bicycle, and I am having a smooth ride in no time!
Decadent concoctions triumph like golden effervescent champagne bubbles!

Now beyond the holidays, that I am having to wean myself though my days, there is this weird wiggle area where complete satiety must be met before I can move beyond this thing!  Cold turkey is working its way in certain ways, like cold turkey: no more apple pie!  I can drop apple pie like a hot potato!  Last year, when my back was hurt, I wanted apple pie from The Apple Pan.  I ate said apple pie.  The scale then spoke.  Irrefutably, if I am eating apple pie and french fries, my weight is high.

At the moment, that is fine.  My weight has been high all year, even without apple pie and fries.  Imagine.

By the time I bought two pies at the store for New Year’s weekend, and ordered fries at the skating rink at my son’s saturday game, I knew I was at my lowest and my very best!  4 days at home to take time to read a book, and exercise and mat work to my heart’s content, equally stretching and lengthening through chapters and muscle groups, with a break for pie, sprinkled with tart frozen yogurt and chocolate chips ~ and the delicacies were ample and decadent.

As the years go by and excessive carbohydrate consumption continues, blood sugar levels get higher and higher. The pancreas has to yell at the fat cells by secreting even higher levels of insulin. Great Balls!

The photo below for “5 ingredient peanut butter energy bites” stopped me in my tracks and inspired me into action right away.
I was thrilled I had flax seeds in my frig and that I could readily make them into flour in my coffee grinder, and thus, bear my first batch of Energy Bites ~
Oats.  so good for you.  but i have fulfilled my morning oatmeal routine, and rarely am hungry for them, and living in so. cal., cold mornings are few and far between.  However to get healthy oats in otherwise, using them to bind two of my favorite ingredients: peanut butter and chocolate chips, is really the bomb!
And then there’s honey.  I make few dessert or sweet treats because of the two ingredients I never like to add: sugar and flour ~ I’ve branched out to coconut flour, but I still lament adding sugar in large quantities, even in cupfuls ~ I don’t seem as much to mind adding the honey ‘ and the brown sugar, and the maple syrup ~ 🙂 I am not using honey in my coffee these days, so there’s room for it in these edibles.
I’ve checked out a bunch of recipes enough to make a Pinterest page and tweaked the original recipe already, adding chia seeds, maca powder, coconut flakes, coconut oil or ghee ~ I’m devoutly for carob chips, so they will be in the mix soon too ~ and golden raisins, sunflower seeds, pumpkin puree and seeds, and more . . .
It is a prayer answered: how else could I eat my peanut butter and chocolate / carob chips instead of spoonfuls directly from the jar? ~ I’ve mixed into yogurt, and added more ingredients, but the ease of making and intaking a batch of bites tops all so far!
All I crave on the side is a fresh apple ~ or the apple chai recipe to make too ~
